If you’ve found yourself with some fresh Hawk’s Wing mushrooms, this Hawks Wings mushroom burger recipe is a simple and satisfying way to enjoy them. Their rich umami flavor and hearty texture make them a natural fit for burgers, and you probably have everything else you need on hand.

Mushroom hunting does not always come with a guarantee that you will find your favorite mushrooms. Some years you might not even be able to fill your basket. Other years you come home with a true bounty, and the challenge becomes figuring out how to cook everything before it spoils or finding a good way to preserve what you cannot eat right away.
That was the situation my husband and I were in when we returned home with several pounds of Hawk’s Wings mushrooms.
With our very full basket of Hawk’s Wing mushrooms, we decided to try a burger recipe that uses mushrooms as a main ingredient rather than just a topping. We tend to keep our pantry simple, stocked with versatile staples that work in a variety of meals. Most of the ingredients in this recipe are ones you probably keep around.

Ingredients
We like to grill burgers in the summer and tend to keep it pretty simple using only a bit of salt, pepper and Worcestershire sauce. The egg in this recipe is used for binding the mushrooms and meat together.
- Ground beef - you could also use elk, bison, or any other red meat of choice.
- Hawk’s Wing mushrooms
- Egg
- Garlic Clove
- Salt
- Black pepper
- Worcestershire sauce

Variations
- If you do not have Hawks Wings on hand, portobello mushrooms would be delicious.
- If you do not have ground beef, bison or elk would be great wild meat alternatives.
- I have not tried other mushroom with this recipe but I would love to hear success stories with other mushrooms- especially wild ones!
Hawks Wings Beef Burgers
Ingredients
- 1 lb Ground Beef can sub Elk, Bison, or other ground red meat
- 8 oz Hawks Wing Mushrooms, chopped Can substitute portobello mushrooms
- 1 Egg
- 1 Garlic Clove, chopped
- ½ teaspoon Salt
- ½ teaspoon Pepper
- 1 teaspoon Worcester Sauce
Instructions
- Sauté mushrooms, set aside and cool
- When mushrooms are finished cooling, combine ground beef, mushrooms, egg, garlic, salt and pepper in bowl, mix until just combined.
- Form 1 inch patties
- Place the burgers on the grill and cook, uncovered, for 3 to 5 minutes a side, depending on the desired level of doneness.
